what i eat when my body feels like sandpaper.

every once in awhile i still have a day where i am totally off my rocker. i ate a huge plate of raw vegetables, combined with a little too much dairy or gluten or something - and everything inside of me starts to feel like sandpaper.

it’s my mistake, i should know better. 

whenever it does happen though, i bombard my gut with healthy fats, easy to digest foods, and a lot of lemon water. 

today is one of those days. 

fortunately though, i am not one to sit around eating spoonfuls of coconut oil, plain nuts or raw avocado.

no - i still get creative.

why would i be sad about days like these, when i get to eat this for breakfast, lunch and dinner?

Chocolate chia-avocado pudding

Soak

  • chia seeds in coconut milk and water

(I typically keep a jar of this in my fridge. Add about 5 tbsp of chia seeds to a small jar filled with 1/2 cup of coconut milk and a cup of water…shake, allow to gel in fridge for as long as possible)

in a blender, combine

  • half an avocado
  • about 1 cup of the chia seed gel
  • 1 pitted medjool date
  • a scoop of raw cacao powder
  • a pinch of vanilla powder

blend.

Pour into a bowl, top with whatever you desire. I use simple things - in this bowl there is:

  • 1/2 chopped orange
  • one chopped (and peeled to make it easier to digest) kiwi
  • cacao nibs
  • cashew butter
  • a couple of crushed pecans and walnuts
