a super easy, super fast dinner...the graduate version of my go-to favourite meal in university.
Roughly chop half a red onion and 5 brown mushrooms.
Add to a hot pan with about 1tsp of coconut oil. Allow to soften.
Meanwhile, boil two inches of water in a small pot. Poach one egg.
Once mushrooms and onion have softened, add balsamic vinegar to cover pan, allow veg to simmer and caramelize.
Prepare fresh greens in a deep plate. Add caramelized veg. Add poached egg on top. Top with chopped cherry tomatoes, spring onions, avocado, freshly grated parmesan cheese (or goat cheese), salt and pepper.
