brown rice tortilla pizzas

this one has been my go to favorite dinner for four reasons.

1.  it's delicious.
2. you can modify the recipe to whatever you have in your fridge at the time and/or your current favorite toppings.
3. dinner is ready in twenty minutes or less.
(and my favorite reason...)
4. you can clean the kitchen while it's in the oven, which means you can enjoy your dinner without having to think about doing the dishes after.

Here is the basic recipe:

Turn the oven on to 400 degrees

Sautee your favorite veggies in a pan with coconut oil (i like to add red onion, zucchini, peppers + mushrooms).

Add meat if you'd like some (i am crazy about tk ranch artisan chorizo sausages and ground locally-sourced bison). When nearly cooked, add a handful of spinach and toss until just withered.

Spread tahini on a brown rice tortilla. Top with cooked veggies (and meat if using). Add some more fresh spinach, chopped cherry tomatoes, pineapple, etc...

Sprinkle with goats cheese, parmesan and nutritional yeast.

Bake on a rack* in the oven for about 10 minutes while you wash the dishes, wipe the counter, put away the extra ingredients, and pour a glass of wine.

*i like to bake my pizza on a rack rather than a pan so it gets nice and crispy.
