for those of you who don't know, my big sister kathleen just spent 17 weeks in her bed before my brand new nephew Eoin arrived.
besides being the greatest big sister of all time, kathleen is the best baker, cupcake inventor, freestyle sewer, and party planner i have ever met. and now that she can finally stand up and bake in her own kitchen kathleen is coming up with some pretty great recipes. she sent me this one she found over at ambitious kitchen and we both drooled over it until she finally made them. the verdict was good.
here is my version.
adapted from ambitious kitchen
add to vitamix:
1/2 can of butterbeans
1/4 cup very creamy cashew butter or crunchy peanut butter (or a mix of both)
1/6 cup maple syrup
1 tsp vanilla
1/4 tsp each: sea salt, baking soda, baking powder
add 1/4 cup roughly chopped 90% dark chocolate (i like lindt) and stir.
pour into greased loaf tin (3inX5in)
bake at 350 for about 20 minutes until the edges brown slightly and a fork comes out clean.
allow to cool.
