the sun got the best of me today.
or at least, it produced the best in me today.
i was dreaming of chocolate. and walnuts. and ice cream. and chocolate and walnuts with ice cream. oh my.
in my little town there is an ice cream bus - it's the greatest little place to get overpriced and boring dairy-filled ice cream. everyone lines up at the school bus and pays $5 a cone (in cash) for a little scoop of mass produced, sugar filled, non-exciting ice cream.
and i get jealous every time i walk by.
'that's it' i said to myself. 'i am making a treat'
and this is what i came up with:
mini mid-day ice cream cakes
in your vitamix, coarsely blend:
- 1/3 cup of walnuts
- four pitted medjool dates (i always get mine at superstore for $8.98 instead of $15 at the safeway)
- 1/2 tbsp of coconut oil
- pinch of salt
you want the walnuts to still be slightly chunky. take the mixture out of the container and divide in half. press each half into 2 three-inch spring form pans.
rinse the vitamix.
to the clean vitamix, add
- 1 small chopped and frozen banana
- 6 frozen cherries
- 1 scoop of vanilla protein powder
- 2 frozen 'ice cubes' of coconut milk (i always freeze some in an ice cube tray)
- a dash of unfrozen coconut milk
blend until the mixture resembles soft-serve ice cream.
scoop half of the mixture into each pan.
top with chopped chocolate + pomegranate seeds. press them into the 'ice cream' slightly.
freeze for about 1 hour until mostly firm.
run a warm knife around the edges before removing the outer portion. serve outside.
