I love it when my family comes to visit. This morning i got to wake up cuddling my youngest niece.
I figured they all needed something to eat for breakfast, so i made this:
vegan banana oatmeal chocolate chip bread with walnuts
- 1 + 1/4 cup oatmeal flour (I ground my own)
- 1/2 cup almond flour
- 1/4 cup all purpose gluten free flour
- 1 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
In a separate bowl, mash together
- 3.5 very ripe bananas
- 1 tbsp coconut oil
- 1/3 cup coconut sugar
- 1 tbsp of molasses
- 1 tsp vanilla powder
Gently stir the dry ingredients into the wet.
- 2/3 cup dark chocolate chips
- 2/3 chopped walnuts
Pour into a greased 8.5x4.5 loaf pan. Top with slices of the other 1/2 banana.
Bake at 350 for 35-40 minutes until fork comes out clean (mine took 37 minutes).
