bake cookies for your neighbours.

this week I have realized that I have become that person - the person who doesn't know her neighbours.

this is fairly discouraging because I always had this idea that 'when I grow up' I will know my neighbours.

alas, this is not the case. 

i once lived in the best house with three of my dearest friends. one of the first things we did when we moved in was bake cookies for the neighbours. first we delivered them to the left, where we met a lovely elderly couple who told us they didn't need to be invited to our parties but were happy for us to enjoy them ourselves.

next we went to the right. at first we were nervous - these neighbours had a big dog! finally they opened the door, and so began one of the best years of my life: joint pot lucks, neighbourhood bocce ball, christmas parties, wine nights and many many other happy times with our neighbours with who we are still friends (they still live there, we don't).

 (gluten free) peanut butter greek yogurt cookies

Preheat oven to 375. 

In a large bowl - or using a stand mixer - beat together 

  • 1/4 cup room temp butter
  • 1/4 cup coconut oil
  • 1/2 cup coconut sugar
  • 1/2 cup brown sugar
  • 1/2 cup peanut butter

until fluffy. 


  • 1 whole egg  
  • 1/3 cup Greek yogurt.

beat again.

in a separate bowl, stir together

  • 1 and 1/4 cup flour (I used equal parts almond flour, sweet sorghum flour, brown rice flour and namaste all purpose gluten free blend) 
  • 1/4 tsp salt
  • 1/2 tsp each baking soda and baking powder
  • 1 tsp vanilla powder
  • 1 cup gluten free rolled oats

once combined, add in

  • 1/2 cup chopped dark chocolate
  • 1/3 cup chopped dried pineapple rings
  • 1 handful coconut flakes

and stir.

add dry to wet. stir to combine, but do not over mix.

drop cookie-sized rounds onto baking sheet.

bake for 10 minutes.

Okay, so remember how I said I was going to bake cookies for my neighbours in this post? Well - they weren't home that night, so we ended up eating them all ourselves. Tonight I finally went over and met the neighbours, this time I baked my new favourite cookies: The Crispy Almond Butter Chocolate Chip Cookies from Angela Liddon's 'Oh She Glows COOKBOOK'. They were delicious, I ate some of this batch too! Also - my neighbours are lovely, why did that take so long?
