Saturday morning chocolate pancakes

I really can't think of many things better than a Saturday morning with no obligations.

and a sunny, +7 degree blue sky Saturday in the mountains in January? What are the chances? 

pure bliss I tell you.

when I woke up this morning, all I could think about was how many different things I could make for breakfast (have you started to realize how much I love breakfast?). sometimes I think it's a miracle that I even ever eat breakfast - not because I would ever consider skipping it (seriously guys, don't do that!) - but simply because I love breakfast soooooo much that I can't decide what to make!

there are too many good breakfast choices.

I love breakfast so much that sometimes I eat it for lunch, and sometimes dinner and also sometimes for bedtime snack. 

And since I'm on a bit of a confession train, I would like to hereby confess that almost every single one of my breakfasts contains chocolate.  

seriously. 

now you know my dirtiest secret.

back to this morning and my breakfast dilemma. ...

what did I finally decide on? chocolate pancakes.

try them - they rocked. 

in a small bowl, mix together:

  • 1/8 cup of hemp protein powder
  • 1/8 cup of arrowroot flour
  • 1/8 cup of raw cacao powder
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp psyllium husk

add: 

  • 1/4 cup of puréed banana (about half of a banana) 
  • 1/3 cup coconut milk
  • a few drops of vanilla stevia
  • 1 tbsp melted coconut oil
  • 2 tbsp egg whites

and stir until well combined.

drop like pancakes onto a pre-heated pan.

once the edges are firm and there are bubbles in the centre of the pancakes, flip and cook for another minute. 

put them on a plate (my recipe made 4 small pancakes). 

heat frozen berries (blueberries & cherries are my fave) in the microwave for one minute. Mash with a fork and pour over the pancakes. Add any other toppings...I did oranges, pomegranate, organic Greek yogurt, hazelnut butter and hemp seeds. 

Enjoy with your freshly brewed coffee.
