lately all of my breakfasts have been in the form of pudding.
it's weird, I know.
but when you accept that breakfast can come in this form, it starts to open up a heck of a lot of possibilities.
There are a number of inspirations to today's breakfast post. One of them being my discovery of the grain free coconut porridge by a tasty love story (I literally eat this every other day). Another being the plant breakfast bowl from the plant in San Francisco (I ate two meals a day at that place when I was in SFO for work last month). And let's not forget the raw buckwheat porridge by green kitchen stories (still my favorite food bloggers of all time - I have enjoyed stalking those two beauties since before their 3 year old was born).
and so was birthed this porridge:
soak 1/4 cup of buckwheat (not the toasted kind) and 5 full walnuts (shelled) in Water overnight.
in the morning, drain and rinse the buckwheat and walnuts and add to your blender.
dissolve 1 tbsp of Great Lakes gelatin in 3 tbsp of a water and allow to sit while you assemble the rest of your ingredients. **
- 3/4 of a frozen banana
- 1 tbsp of honey
- 1 large scoop of organic Greek yogurt
- 1 scoop of plain protein powder
- 1/2 tsp of tumeric
- 1/2 tsp of vanilla powder
- and the dissolved gelatin
blend until smooth
pour in to a bowl and top with blueberries, pomegranates, bee pollen and almond butter.
that will get your day started off on the right foot.
** Feel free to completely leave the gelatin out if you don't have any on hand.
