the winter version of what i eat almost every day, for lunch AND dinner:
heat a tsp of coconut oil in a small frying pan with a tight fitting lid.
chop up two large leaves of red swiss chard and throw it in the pan. cover with lid and let steam for 5 ish minutes, stirring once or twice.
while the swiss chard steams, chop up half of a pear and a whole tomato. add them to the bowl.
grate one small rainbow carrot and add it to the bowl too.
once the chard is steamed, add it to the bowl with:
and your done.
another lunch in 5 minutes!
