grab & go breakfast bowl

have i told you that i love breakfast?

even breakfast that gets eaten in the car while i am driving on the highway in the dark on my way to the big city? (just in case you are a police officer, i did not just admit that i eat breakfast in the car). 

this one is especially awesome for those mornings when you only have time to grab what is in the refrigerator and run out the door. lucky for you, you can make this one the night before! and it will take you less than two minutes.

[special shout out to the katie mahon whom i used to live with in school: if you had known this recipe 5 years ago your life would have been much easier!]

add to a take away container (i love this one from crate & barrel)

  • 5 frozen cherries & a small handful of frozen blueberries
  • about 1 tbsp of buckwheat groats on top. 

in the blender (it doesn't even have to be a vitamix for this one!) combine:

  • 1/2 frozen (or unfrozen) banana
  • 1 tbsp of peanut butter
  • 1/2 cup of coconut milk
  • 1 scoop of unflavored protein powder
  • 1 tsp of psyllium husk

until smooth. pour over the frozen berries & buckwheat.

top with bee pollen & cacao nibs. 

you can either eat this right away, or leave it in the fridge overnight to take with you in the morning. either way, it is delicious.
