outrageously easy mixed green salad.

why is it that whenever you make a healthy choice at a restaurant and order a salad you are almost always disappointed? 

the mainstream restaurant community just does not know how to make a good salad. 

its rather disappointing.

i would rather eat my salad at home thank you.

it is way easier, way more delicious and much much cheaper.

heat up a pan on your stove top. chop up 4 brussel sprouts into shreds. add to the pan and toss until browned. add one stalk of shredded kale and toss for another minute. 

meanwhile, add to a bowl 

  • a handful of spinach
  • a handful of mixed greens
  • a handful of chopped cherry tomatoes
  • about 1/4 cup of leftover quinoa
  • half of a small cooked chicken breast, shredded
  • 1/4 of an avocado, sliced

now add the heated sprouts and kale to the bowl.

add about 1 tbsp of mustard, 1/2 tbsp of balsamic vinegar. toss with a fork.

sprinkle with 1/2 tbsp of nutritional yeast.

love it.
