peanut butter & chocolate bean brownies

last night i just did not feel like eating dinner. nothing sounded appealing. 

vegetables? no.

soup? no.

quinoa? no.

egg? no.

bananas? no.

beans? no....wait.

about a year ago my sister made the most delicious chickpea blondies ever. seriously, if you have not made those things you need to try them now.

anyway. i looked at the beans again.

all i wanted in that moment was chocolate and peanut butter.

maybe if i combined those two things with beans i could call it dinner?

i think so. 

and in that moment, the peanut butter & chocolate bean brownies were born.

preheat the oven to 350. 

in a blender, combine:

  • 1 can aduki beans (i like eden organics)
  • 1/3 cup dark maple syrup
  • 3 tbsp crunchy organic peanut butter
  • 2 tbsp coconut oil
  • 1 tsp maca powder
  • 1/3 cup cocoa powder
  • sprinkle of salt
  •  3 drops of nunaturals vanilla stevia

blend until smooth. 

add 2 medium farm fresh eggs and blend again (do not over blend the eggs).

stir in a handful of chocolate chips & chopped dark chocolate at your discretion.

pour into an 8x8 pan. 

melt 2 tbsp of peanut butter with 1 tsp coconut oil, stir to combine. 

swirl over top of the brownies.

bake for 18 minutes, until the edges pull away but the centre is very moist and slightly under cooked. 

allow to cool, or not.
