growing up we kept my mom pretty busy.
and these days as a jr. high band teacher she is still pretty busy.
some weeks i'm not even sure how she survives.
i think her secret is her saturday morning ritual: reading a book in bed and then heading to the kitchen to make a late morning waffle.
and while my mother has taught me a lot of things in life, i think one of her best life lessons is to eat waffles on the weekend.
This one's for you mom!
To a bowl, add
- 1 large egg
- 3 tbsp egg white
- teaspoon of psyillium husk
- drops of stevia 5
- 1/2 tsp of apple cider vinegar
in a small dish, melt
- 1 tbsp of butter
- 1 tbsp of coconut oil
in the microwave for 30 seconds.
add the butter & oil into the egg mix, whisk.
in a dry vitamin or coffee grinder, grind
- 1 tbsp of flax seed and
- about 10 pecans
to a powder.
add to the bowl with
- 1.5 tsp of coconut flour
stir to combine allow to sit about 5 minutes to thicken.
cook on high in a waffle maker until done.
