as a general rule, smoothies do not make the breakfast lineup. partly because i love eating and partly because they just don't come close to satisfying my morning hunger.
lately though, i have been up-ing my fat intake and experimenting with foods that make my body feel better. i'm finding that eating higher quality fats, combined with less protein and carbohydrates throughout the day actually give me a crazy amount of energy. i'm also much less hungry and sometimes only have two meals a day! part of me is a little bit depressed about this scenario because i LOVE food, and i just want to eat food ALL OF THE TIME. but the other part of me feels great, so that is pretty awesome. I definitely wouldn't say that these eating habits are for everyone, but for a girl who sometimes suffers from unexplained food related reactions on a daily basis, this is pretty great news.
this cherry breakfast smoothie is quickly becoming a favourite of mine and pretty much fills me up on it's own. usually I eat it with a forked egg fried in coconut oil with cashew butter, just because i like to eat.
to a blender, add:
- large handful of frozen cherries (8-10)
- small handful of frozen blueberries (10-12)
- 1/4 of an avocado
- 1/4 cup coconut cream
- handful of ice
- 1/2 teaspoon vanilla powder
- 2 drops stevia (optional)
- water &/or coconut milk to thin
blend on high for 1 min
top with bee pollen (or at least, that's what i did).
