sweet omelette

here is a confession: i like sweet breakfasts. 

i think you all knew that.

so even though i like the idea of integrating more satisfying savoury things into my first meal of the day, i usually end up with some sort of sweet concoction anyway (avocado, egg, chicken, granola & peaches in a bowl anyone?).

anyway. if you are like me and need to eat big at breakfast, this is the perfect combo of satisfying & sweet. like dessert, but we can't all start our day fuelled entirely on chocolate.

First, heat a small frying pan on the stove over medium heat.

Then, whisk together 

  • 2 eggs 
  • 2 tbsp of coconut (or other non dairy) milk 
  • cinnamon 
  • vanilla

Pour onto pan & cook omelette style (for tips, check out steps 4-9 here)

On one half, add a few pieces of 90% chocolate and a scoop of full fat coconut cream. Fold in half.

Remove from heat & top with cashew butter, bee pollen & smashed cherries
