I have realized lately that I am the master at meals for one. Ask me to make a curry for family dinner and I get scared. But a one pot lunch for one? Any time.
I had some steamed & chopped sweet potato in my fridge that I wanted to use up today, which meant that this simple curry took me about 5 minutes to prepare. If you don't have any steamed sweet potato on hand, you can still make this in under 15 minutes. Just chop a small sweet potato in bite sized pieces, and steam for 7-10 minutes before beginning this recipe.
Perfect for a cold winter work day at home.
To a pot, add
- 1/2 cup of chopped and steamed sweet potato
- 1/2 cup unsweetened coconut milk (or any plant based milk)
- 5-10 chopped cherry tomatoes
- a handful of raw chopped purple cabbage
- 1/2 tbsp of natural peanut butter
- 1/2 tbsp of raw honey
- sprinkle of tumeric
- grated ginger, to taste
- salt, to taste
Put a lid on the pot and allow to simmer on low for 3 minutes.
- a handful of torn kale
- a handful of spinach
Stir into the mixture, cover again and allow to simmer for a few more minutes until done (about 5 minutes).
Garnish with chopped cilantro and walnuts.
