i promised i'd be back on here sooner rather than later, so this is me keeping my promise to you.
a few years ago i came across this recipe for grain free coconut porridge by josephine over at a tasty love story. it quickly became a favourite go-to breakfast in my house because it was super easy and super filling. my version of this porridge has evolved over the years. it's a little simpler and doesn't require opening a can of full fat coconut milk. if i feel like i need a little extra dosage of fat, i whisk a tbsp of coconut oil right into this porridge when i whisk in the egg, and/or i add a tbsp of nut butter on top. this is actually one of the easiest breakfasts of all time - and it's a great base for adding toppings, which is really why i eat breakfast in the first place.
here's how it goes:
in a small pot, stir together
- 1.5 tbsp of freshly ground flaxseed
- 1/2 cup of water
& then place the pot on your stove on medium-low heat.
meanwhile, while the mixture heats up on your stove, chop up half of a small-ish banana (save the other half for tomorrow's breakfast) and add it to the pot. stir again.
reduce the heat to low and let the mixture simmer, whisking every minute or so until it starts to become porridge consistency (around 4 minutes, depending on the temperature of your stove and other variable factors like altitude, obviously).
- 1 tsp of true cinnamon
- a pinch of salt
- a pinch of vanilla (or a dash of liquid vanilla)
to taste. stir again and add a dash more water if necessary (ie. if the porridge is too thick).
then crack one whole egg into the porridge and whisk frequently until the egg is cooked (about another minute).
you should now have a super creamy porridge.
remove from heat, pour/scrape into a bowl and add toppings. in this photo i have topped mine with:
- a handful of my very own pumpkin spice granola (up soon on the blog!!)
- cacao nibs
- cashew butter
- bee pollen
- coconut flakes
- pomegranate seeds
voila! a healthy, delicious + super simple breakfast in under 5 minutes.
