i really like coffee.
and i really really like my coffee black.
but every once in awhile it's nice to switch it up: especially if it involves homemade sesame-date milk (my current fave!) which is exactly what inspired this 'recipe'.
next time you're looking for a sweet iced coffee treat you should avoid your local coffee house and make this one at home instead.
Soak 3/4 cup of organic raw sesame seeds in water over night.
In the morning, add the sesame seeds and 2.5 cups cold water to your high speed blender.
blend on high for one minute.
add 4 (pitted) medjool dates.
blend on high for another minute.
pour mixture into a nut milk bag and squeeze gently over a bowl until no liquid remains.
make 1 shot of strong espresso coffee (or more, if you'd like).
Fill a tall glass or mason jar with ice. Pour sweetened milk over top of the ice until 3/4 full**. Top with the shot of espresso.
**this is all preference, if you'd like less milk & more coffee pour accordingly. if you like your coffee sweeter, add a tad of maple syrup or vanilla stevia, if you like it less sweet then add only 3 dates.
