5-minute single-serve soup for cold&flu season

man - who else is feeling under the weather these days?

this soup is perfect for those occasions when your head feels like smash and you don't feel like cooking, but you really want to pack your body full of really good things so you can get back to enjoying all that this winter-spring weather has to offer!

the best thing about this recipe is that it uses whatever you have on hand. it's super flexible and every time that I make it, it turns out a little different. 

i swear you can not mess this up. 

here it goes:

Heat up a frying pan on medium hot heat (I like using this small frying pan)

add a drizzle of oil and whatever chopped vegetables you have on hand. I like:

  • shredded brussel sprouts
  • swiss chard
  • kale
  • cherry tomatoes
  • zucchini
  • mushrooms
  • pre-cooked squashes or sweet potatoes

if you have any meat already cooked, you can add this too (I usually have ground beef or shredded chicken hanging around, so I add those). 

While the veggies heat up, add 1-inch chunk of fresh, peeled ginger and about 1 to 1.5 cups of boiling water to a vitamix or high sped blender. Blend on high for a minute until the ginger is pulverized, then add one heaping tbsp of miso*** and blend again to combine. 

***Make sure you buy the legit miso paste that you find in the refrigerator at a health food store. I like this one.

Reduce the heat of the frying pan to low, and our the miso-ginger water into the pan and spice as you feel inclined. I like to add:

  • a dash of cayenne
  • a dash of tumeric
  • some pepper
  • & a wee bit of salt

cover & allow to simmer gently for about 2 minutes. 

Finish with a drizzle (about a tbsp) of rice vinegar and a drizzle (about a tbsp) of toasted sesame oil

Taste test and adjust seasonings as necessary. 

& Just like that: instant soup packed with all the veggies.
